Whole and half beef orders are cut to your specifications. Quarter beef orders use a standard cut and wrap package and are a mixed quarter, including a mix of fore and hind cuts.

These weight ranges are approximate and we cannot guarantee a particular hanging weight. Prices are based on the hanging weight. Cut and wrap is custom to your specifications. Budget at least an additional $1.20/lb for cut and wrap expenses. Contact the butcher, Quadra-K, for additional details on cut and wrap. (509) 624-9760. There will be a 20-30% shrink between hanging weight and your take-home weight. This is because moisture is lost during the hanging process, and bones, trim, and fat are taken out during the cut and wrap process.
